Mother's Day Breakfast
Here's a simple, yet delicious Mother's Day breakfast the kids can make for Mom in bed!
Berry Pancakes
A Mix of Berries and Pancakes - a thin, delicious pancake!
Ingredients
| 2 | Eggs |
| 2/3 cup | Milk |
| 1/3 cup | Water |
| 1/2 teaspoon | Vanilla extract |
| 1 tablespoon | Maple syrup |
| 1 teaspoon | Double acting baking powder |
| 2 tablespoons | Powered sugar |
| 3/4 cup | All purpose flour |
| 1/2 teaspoon | Salt |
| 1/2 cup | Raspberries, Blueberries and Strawberries (Fresh or Thawed from freezer) |
Preparation

Sift dry Ingredients together.

Beat the Eggs and add the liquid ingredients and beat again.

Combine the ingredients and stir until most of the lumps are gone. Don't worry about the rest, they will take care of themselves.

Pour the batter into a lightly greased frying pan and spread the batter so the whole bottom is covered. Cook on medium heat for about 30 seconds on each side untill both sides are a golden brown.

Wrap a few tablespoons of each kind of berry in the pancake.

Optional: You can also spread maple syrup over the pancakes instead of berries.
Cook's Notes
Batter will be thin and the pancakes must be made thin! If you are using a cast iron pan or any other pan without teflon then use canola oil to grease the pan instead of butter.

"Mom's Mimosa"
Skip the champagne and treat Mom to a non-alcoholic drink that has the fizz of a Mimosa, with out the punch. This drink is made with orange juice and ginger ale, along with ice and fresh orange.
Ingredients:

1 small can (6 ounces) frozen orange juice concentrate

1 liter ginger ale, or 4 cups

ice cubes
-
1 orange, thinly sliced
Preparation
Combine orange juice concentrate and ginger ale in a large pitcher. Stir to blend. Place a few ice cubes in each of 4 glasses. Pour orange juice mixture into glasses then garnish with orange slices.
Serves 4.
